Why we pour in three stages and what changes when you wait.
The first pour is not about extraction, it is about wetting the bed evenly so the rest of the brew has somewhere to go. We give it forty seconds.
From there the two remaining pours are a matter of patience. Keep the bed flat, keep the water off the paper, and let the drawdown finish before you judge anything.
The difference between a rushed brew and a considered one is rarely equipment. It is thirty seconds of attention.
